Preparation

  1. In a mixing bowl, combine red onion and bell peppers. In another bowl combine shredded potatoes, paprika and cumin.
  2. Lightly oil the sides of a slow-cooker, and layer 1/3 of the potatoes, 1/3 of the onion & peppers, 1/3 of the breakfast sausage, and 1/3 of the cheese. Repeat layers twice.
  3. In a large bowl, whisk together eggs, milk, salt and pepper, and pour over casserole.
  4. Cover and cook on low for 7-8 hours, or overnight. Top with green onions, and serve!
